Ingredient Selection
We strive to source the highest quality ingredients available for our bread. We choose local and support our community when possible.
Flours
We choose our flours first based on ethics. As consumers, and especially as a business, our money is our voice and we choose to use our dollars to show what matters to us. We choose flour based on the care for and of the farmer, and their care for and of the earth they work.
All of our flour is either grown organically or with regenerative agriculture practices.
All of our flour is glyphosate free.
Most of our flour comes from Idaho growers.


Wheat Berries
All of our bread (except for some of the craziest varieties - I'm looking at you, Party Bread) includes 10-20% fresh milled wheat berries. The wheat berries we use are all certified Organic Hard Red Wheat. We rotate a selection of ancient grains in our Organic Rustic loaves.
Milk
When available we use local, raw, A2A2 milk in our recipes. Every week we home-culture two gallons of luscious and cream-heavy milk for the Buttermilk Sourdough that is baked on Friday.
We choose to use local milk because we know the cows and the person that milks them.
We choose to use A2A2 because we know this milk is better for many bodies.
